Thanksgiving Recipes

I wanted to share the Thanksgiving recipes I used this year for the first home cooked Thanksgiving meal we've ever made. Toro was a great support and let me order him around in the kitchen. I couldn't have done it without his help especially since the turkey was ready 3 hours earlier than planned. Everything was absolutely FABULOUS if I do say so myself. Thank you MOM!, Joan, Rachel, Allrecipes & Pioneer Woman Cooks!! These are all nut free recipes and all but one we did egg free. Ener-g Egg Replacer was again a lifesaver even in the cheesecake recipe! We are grateful MG can have dairy now. If you are still cooking dairy free try using Nucoa Margarine to replace butter.

Recipe 1 - Brining the Turkey, from Allrecipes.

Recipe 2 - Roasted Turkey, from Pioneer Woman Cooks.

Recipe 7 - Pumpkin Swirl Cheesecake, Rachel (A new Tradition)
Recipe 8 - Fairy Rolls, (A Lisita Family Tradition)

Pour 2 cups hot water over 1 cup butter ( 2 cubes) . Let cool and add the following:2 Tbs yeast, 2 eggs (or energ egg replacer), 3/4 cup sugar, 1 tsp salt, 1 tsp Baking Powder, 6 1/2 cups flour. Stir together- Don't mix too much. Let rise until double. Roll out & shape into rolls. Bake at 400 for about 10 minutes or until golden brown. Time and temperature may vary with your altitude.


Recipe 9 - Cooper Carrots, (A Toro Family Tradition)

2 lbs. carrots thickly sliced, 1 small green pepper chopped, 1 medium onion sliced, 1/2 c. lemon juice, 1 c. sugar, 3/4 t. pepper, 1/4 t. salt, 1/4 c. vinegar, 1/2 c. salad oil, 1 c. tomato soup, 1 t. mustard, 1 t. worchestershire sauce.
Cook carrots until just tender. Add remaining ingredients and let stand overnight. Serve cold.

Recipe 10 - Pretzel Jello Salad, (A Lisita Family Tradition)
1st Layer - 2 cups crushed pretzels, 3 Tbs Sugar, 3/4 cup melted butter - Mix together and line 9X13 pan and then bake at 400 4 minutes.
Cool 2nd Layer 1, 8 oz cream cheese, 1/2 to 1 cup sugar, 1 small can crushed pineapple. Mix and add 8 oz cool whip. Put on cooled first layer.
3rd Layer - 1 lg raspberry jello, 2 cups boiling water. Dissolve and partially set. Then stir in frozen raspberries, drained. Add to 2nd layer and refrigerate overnight.

Recipe 11 - Perfect Pie Crust, Pioneer Woman Cooks

Recipe 12 - Banana Cream Pie, (A Lisita Family Tradition)
3/4 cup sugar, 1/3 cup flour, 1/4 tsp salt, 2 cups milk, 3 slightly beaten egg yolks, 2 Tbs Margarine, 1 tsp vanilla
Mix together sugar, flour, and salt in pan. Gradually stir in milk. Cook and stir over medium heat until it boils and thickens. Cook 2 minutes longer. Remove from heat. Stir in small amount of hot mixture into egg yolks. Return to hot mixture. Cook another 2 minutes. Remove from heat . Add butter and vanilla. Cool and refrigerate.
THE EGG SUBSTITUTE WILL NOT WORK IN THIS RECIPE. LUCKY FOR US MG WAS SATISFIED WITH A BANANA CREAM JELLO PUDDING!
